Frozen Raspberry and Elderflower Margarita

Ingredients

  • cup raspberries, plus extra to garnish (optional)
  • 60ml tequila reposado
  • 30ml elderflower liqueur
  • juice of 1 lime
  • ice

This delish frozen margarita is easy to put together, but looks impressive enough to induce that hard-to-achieve wow factor. And it's a great excuse to get out the elderflower liqueur. Serves 1

  1. Puree raspberries, then pass through a fine strainer. Discard seeds.
  2. Pour liquid raspberry into an ice-cube tray and place in the freezer. When fully frozen, put 2-3 frozen raspberry cubes, along with a handful of crushed ice, into a blender with remaining ingredients and blitz. Any remaining frozen puree can be put back in the freezer for next time.
  3. Pour into a margarita glass and garnish with raspberries threaded on to a cocktail skewer, if desired.
