Ingredients

For the vanilla pear syrup:

2 pears, cores removed and roughly chopped

cup sugar

1 cup water

zest of half a lemon

2 tablespoons vanilla bean paste or pure vanilla essence

For the drink:

2 chunks of pear from vanilla pear syrup

90ml brandy
-
juice of one lemon

4 tablespoons vanilla pear syrup

ice
-
soda
Like a hug in a glass, this cocktail combines the honeyed flavours of pears, vanilla and brandy. Serves 2

To make the vanilla pear syrup, add all syrup ingredients to a medium saucepan and bring to a gentle simmer. Simmer for 10 minutes, stirring occasionally. Once pears are soft, remove syrup from heat and leave to cool

Add two chunks of pear, brandy, lemon juice and syrup to an ice-filled cocktail shaker and shake well for 30 seconds

Pour evenly between two ice-filled short glasses and top with chilled soda
