Lemon Meringue Pie

Ingredients

  • 20ml Limoncello
  • 15ml Licor 43
  • 30ml lemon juice
  • 30ml simple syrup, plus extra, to rim glass
  • ice cubes
  • 60ml cream
  • meringue, store-bought, to garnish
  • crushed wine biscuits, to rim glass
Think of this as a deconstructed Lemon Meringue Pie – sweet yet tart, with the right amount of creaminess. Serves 1.

  1. To rim the glass: dip an upside down martini glass into simple syrup, then dip into finely-crushed biscuit crumbs. 
  2. Add Limoncello, Licor 43, lemon juice, simple syrup and cream into a shaker and dry shake (without ice) for 30 seconds.
  3. Add a handful of ice cubes and shake again.
  4. Strain into glass. Garnish with a meringue.
