Campfire Sour


  • 45ml Bacardi Spiced Rum
  • 1 tablespoon lemon curd (we used Barker's)
  • 20ml fresh lime juice
  • 1 teaspoon sugar
  • 1 egg white
  • Crusted Marshmallow
  • 1 marshmallow
  • juice of 1 lemon
  • freeze-dried pineapple chunks, crushed (we used Fresh As)
This is sure to dazzle. Bacardi Spiced Rum and tangy lemon curd bundled up together in a creamy sour. Serves 1

  1. For the crusted marshmallows:
  2. Toast the marshmallow, dip it lightly in the lemon juice and roll it in the crushed freeze-dried pineapple chunks.
  3. For the cocktail:
  4. Place all the ingredients in a shaker tin, shake together then pack the tin with ice and hard shake until the tin starts to frost.
  5. Fine strain into a chilled rocks glass over a block of ice and garnish with the crusted marshmallow.
