Made from the hearts of blue agave plants which have been cooked, fermented and then distilled, tequila is a complex spirit that's still largely produced with traditional processes. Available in three types: blanco (white/new), reposado (rested) and anejo (aged), tequila can offer a wide range of flavour characteristics, from floral, fruity and sweet to mineral, peppery and dry, often with oaked elements such as vanilla, caramel and spice.
Because of this flavour diversity, tequila can be used in a variety of cocktails, from classics like the margarita, to fruity, punch-like numbers, and more savoury concoctions. Here are three of our favourites...
