Bombay Sapphire Ambassador Chase Bickerton and O’Connell Street Bistro Executive Chef Mark Southon have teamed up to craft a unique pop-up dining experience in Auckland's Parnell. Tickets are on sale now for the exclusive two-week bar and restaurant, Project Botanicals, opening on November 11th. Having previously enjoyed a sell-out run over two years in Melbourne, Auckland seems like the perfect location for a Kiwi version of this exciting experience.

Bombay Sapphire have long been proud of their ten exotic botanicals used in the creation of their premium gin. Located at James, Parnell, the Botanicals Project offers a menu of 10 cocktails, each inspired by one of the 10 botanical ingredients in Bombay Sapphire, paired with 10 complementary dishes. Expect snapper ceviche paired with a Bombay Sapphire and tomato water cocktail with a splash of Kaitaia Fire. Or how about a gin and cold drip coffee martini paired with venison loin, celeriac and coffee mayo? Each dish has been created to subtly balance the flavour of an exquisite Bombay Sapphire cocktail based on one of the core aromatic ingredients.
