Thai Coconut Mojito

Ingredients

  • For the chilli rim:
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon chilli flakes
  • For the cocktail:
  • 90ml Malibu
  • 90ml white rum
  • 1 tablespoon sugar
  • juice of 4 limes
  • 4 sprigs fresh mint
  • soda

Coconut, rum, lime, mint and chilli meet in this Mojito inspired by South East Asian flavours. Serves 2

  1. To make the chilli rim, mix together sugar, salt and chilli flakes in a small bowl. Run a wedge of lemon or lime around the rim of each glass and dip into the bowl
  2. Place Malibu, white rum, sugar, lime juice and 1 sprig of mint into a cocktail shaker and shake for 30 seconds. Strain into two ice-filed glasses. Top with soda and stir gently to combine before sliding remaining mint into glasses
