Ingredients

  • 40ml Jose Cuervo Especial Tequila
  • 15ml fresh lime juice
  • 10ml Tio Pepe Sherry
  • 5ml apple cider vinegar
  • bitters
  • blueberries and fresh mint or lemon balm, to garnish (optional)
  • ice

As delicious as it is eyecatching, this colourful cocktail is the cover star of our new summer issue for 2018-19. Serves 1

  1. Add the Jose Cuervo Especial Tequila, fresh lime juice, Tio Pepe Sherry and apple cider vinegar to a highball glass, fill half the glass with crushed ice and give a quick little swizzle with a barspoon/swizzle stick

    1. Don’t’ have a crushed ice feature on your fridge or a $2,000 blender (who does?!). The quick cheat’s way to make crushed ice is by placing ice cubes in a clean pillowcase and bashing them with a wooden mallet, softball or cricket bat or sturdy rolling pin, making sure to take care of your surroundings of course! Pat the ice dry with the pillow case or a tea towel before adding to your glass for dry crushed ice, which works best in cocktails
  2. Add more crushed ice to the top of the glass so it is packed full. Garnish with a cap of bitters for colour and add blueberries and mint or lemon balm to finish if using
