Sparkling Vodka Pops

Ingredients

  • 2 bottles Lindauer Classic Ros or Classic Brut cuvee sparkling wine
  • For the mango popsicles:
  • 1 mango
  • cup 42 Below Vodka
  • cup sugar syrup
  • cup soda water
  • For the berry popsicles:
  • cup 42 Below Vodka
  • 2 heaped tablespoons each frozen cranberries and blueberries (fresh or frozen)
  • 1 cup cranberry juice

Just looking at these beautiful cocktails made with bubbles and fruity vodka ice blocks will make you want to throw a party! Serves 12

  1. Serve popsicles in a glass (see below for recipe steps) and top with the Lindauer Brut or Ros sparkling wine
  2. For the mango popsicles:
    Blend mango and vodka together to form a puree. Fill popsicle molds full, and freeze for two hours. Mix together sugar syrup and soda water. Pour into molds until 0.5cm from the top, and push the popsicle stick down just far enough so it stands up in the mango. Freeze for at least 3 hours
  3. For the berry popsicles:
    Blend berries and vodka together to form a rough puree. Fill popsicle molds full and freeze for two hours. When the mix is semi-frozen, pour cranberry juice into molds until 0.5cm from the top, and push the popsicle stick in as you did for the mango. Freeze for at least 3 hours
