Gin & Blueberry Prosecco Popsicles

Ingredients

  • 100ml Greenall's Blueberry Gin
  • 150ml soda water
  • 300ml lemonade or sparkling water
  • 50ml simple syrup
  • 1 cup frozen blueberries (you can use fresh, but the popsicles will stay clear)
  • 1 bottle prosecco
Cooling down has never been so fun, thanks to an ice block in a glass of bubbles! Makes 6 popsicles.
  1. In a jug, combine the gin, soda water, lemonade/sparkling water, and simple syrup. Mix well.
  2. Put 8 to 10 frozen blueberries in each mould and pour over the cocktail mix.
  3. Put the lid on the moulds and insert popsicle sticks evenly.
  4. Freeze for at least 6 hours or overnight.
  5. When ready to serve, pour chilled prosecco into glasses and add a popsicle.
