Caribbean Highball

Ingredients

  • ice
  • 50ml Bacardi Spiced Rum
  • 75ml pineapple juice
  • 120ml ginger beer (depending on your glass)
  • few dashes Angostura Bitters
  • lime wedge, to serve
  1. Fill a highball glass with ice (we used giant square ice cubes).
  2. Add Bacardi Spiced Rum, pineapple juice and 75ml of the ginger beer (you'll need more later).
  3. Add a few dashes of Angostura Bitters.
  4. Gently stir with long cocktail spoon.
  5. Top up with ginger beer and garnish with a lime wedge.
