Ingredients

50ml Bacardi Spiced Rum

75ml pineapple juice

120ml ginger beer (depending on your glass)

few dashes Angostura Bitters

lime wedge, to serve

Fill a highball glass with ice (we used giant square ice cubes).

Add Bacardi Spiced Rum, pineapple juice and 75ml of the ginger beer (you'll need more later).

Add a few dashes of Angostura Bitters.

Gently stir with long cocktail spoon.

Top up with ginger beer and garnish with a lime wedge.
