Plum Gin Fizz


  • For the plum syrup:
  • 4 ripe dark-flesh plums, roughly chopped
  • ½ cup sugar
  • 1 cup water
  • zest of one lemon
  • dash of pure vanilla essence
  • For the drink:
  • 180ml gin
  • juice of two lemons
  • soda
  • ice

Sharp and sweet plums update a classic gin fizz. Serves 4

  1. To make the syrup, add all syrup ingredients to a medium-sized saucepan and bring to a gentle simmer
  2. Simmer for 8–10 mins, stirring occasionally
  3. The mixture should become soft and syrupy
  4. Remove from heat and leave to cool
  5. Divide gin, lemon juice and soda between four ice-filled glasses
  6. Spoon two tablespoons of cooled plum syrup into each drink and gently stir once to combine
