Pear and Rosemary Collins


  • 4 tablespoons pear and rosemary syrup
  • 90ml Beefeater gin
  • 4 chunks of pear (from pear and rosemary syrup)
  • juice of 2 medium lemons
  • soda water

Sweet and spicy, the Pear and Rosemary Collins is a gorgeous tipple to try this winter. Serves 2

  1. Make pear and rosemary syrup

    Pear and rosemary syrup

    1. Add one cup of water and one cup sugar in a saucepan. Stir to combine
    2. Add in two sprigs of rosemary and 2 pears chopped into quarters with cores removed
    3. Gently heat through until all sugar is dissolved
    4. Continue to heat until pears are soft
    5. Remove from heat and allow to cool
  2. Place pears from syrup in a cocktail shaker and muddle them well
  3. Add all other ingredients and shake well
  4. Adjust lemon or syrup to taste
  5. Strain into two glasses filled with ice
  6. Top with soda water
  7. Enjoy!
