1 rockmelon

2 tablespoons ginger marmalade

150ml gin

50ml lime juice

300ml ginger beer

crystallised ginger and rockmelon to garnish (optional)
This granita made with ginger marmalade, gin and rockmelon is perfect for summer entertaining. Serves 4-6

Cut rockmelon, discard seeds and cut away skin. Puree the flesh in a blender with the ginger marmalade, gin and the lime juice

Pour into a large container, add the ginger beer and stir. Cover and freeze, periodically scraping with a fork as it starts to freeze

Serve in a glass or bowl with a spoon, garnished with the ginger and melon if using
