Bourbon Barbecue Sauce

Ingredients

  • 2 tablespoons neutral cooking oil, such as canola or sunflower
  • 1 medium onion, sliced
  • 3 garlic cloves, chopped
  • 1 tablespoon chopped jalapeos
  • cup brown sugar
  • 1 tablespoon chilli powder
  • 1 tablespoon molasses
  • 1 tablespoon chopped coriander
  • 1 teaspoon ground cumin
  • 400 grams tinned crushed tomatoes
  • cup bourbon
  • cup hot water
This spicy sauce made with bourbon is a meat match made in heaven
  1. Heat the oil in a large, heavy-bottomed pan over a medium-high heat. Add the onion, garlic, and jalapeos and saut for about 78 minutes until soft
  2. Add the sugar, chilli powder, molasses, coriander and cumin and stir until the sugar dissolves
  3. Add the tomatoes, bourbon and water, and mix well. Bring the sauce to the boil, then reduce the heat and simmer uncovered for about 30 minutes, stirring often. The sauce will thicken and reduce
  4. Taste and season as necessary, adding sugar if its too spicy. Use a stick blender to blend to a smooth consistency
  5. Serve with crispy chicken bites, on burgers, or with your favourite grilled meat
