Slice the lemon into 8 wedges and poke a couple of cloves into each one. Place in an airtight container and add the pears, rum, nutmeg, and ginger. Seal with the lid and leave in the fridge for a few hours to infuse.
Just before serving, pour the rum mixture into a pitcher. Add the sparkling wine and the cranberries. Top with the sparkling water (as much as you need depending on your pitcher size) and mix together gently.
