Pear and Rosemary Collins

Ingredients

  • 4 tablespoons pear and rosemary syrup
  • 90ml Beefeater gin
  • 4 chunks of pear (from pear and rosemary syrup)
  • juice of 2 medium lemons
  • soda water

Sweet and spicy, the Pear and Rosemary Collins is a gorgeous tipple to try anytime; but is particularly cosy for winter. Serves 2

  1. Make pear and rosemary syrup
  2. Place pears from syrup in a cocktail shaker and muddle them well
  3. Add all other ingredients and shake well
  4. Adjust lemon or syrup to taste
  5. Strain into two glasses filled with ice
  6. Top with soda water
  7. Enjoy!
